Linen is produced by the Weaver and Fiber Watermill from Flax.
It has several uses:

The Taylor, Clothier and Seamstress use Linen to make Dress Coats.

The Clothier can also make Full Livery from Linen + Silk and Full Suits from Linen + Wool.
